WHY ELEUSIS?  Eleusis is the ancient Greek city where the cult of the goddess Demeter existed and where the famous religious festival, the Eleusian Mysteries, was performed in her honour.  Demeter’s mythological role was to bring forth the fruits of the earth and in particular the grains – her emblem is the poppy, a bright red flower that grows among barley.
